Shamrock-y Road

While some of you are surely nursing a St. Patrick's Day hangover, these Two Crusty Gals are recovering from a sugar overdose courtesy of Established's rocky road pie.

Yesterday marked the feast day of this Emerald P-isle's Patron Saint and there was much revelry to be had (which is why this post comes a day late). While the festivities were calling our name, it's never a good idea to drink on an empty stomach. We kept our pie-orities straight, and boy, are we glad we did!
When Established first teased this week's pie we were convinced it would be s'mores, and these two marshmallow skeptics were marsh-bummed. But when we tasted the homemade marshmallow, we marsh-mellowed right out. What began as a rocky road quickly became an enjoyable journey. Buckle up and let's break it down.
Visually, this pie was a throwback to the dark chocolate cream cheese
and honeycomb from our first review. The satin-y filling was topped with a rich ganache and supported by an almond biscuit base. This pie was just how we like our Saudi oil heirs, rich AF. White chocolate buttons and marshmallow chunks studded the tangy cream cheese filling, offering a nice surprise in texture and flavor.
The garnish, however, was controversial; while the marshmallow won our hearts by melting in our mouths, the ginger graham cracker left One Crusty Gal saddened by its sodden texture. This theme carried through to the almond crust, which unfortunately was too oily to stay together to our liking. This now marks the second time that One Crusty Gal laid down her fork and desserted the battle. Methinks she doth protest two crusts!
This pie sham-rocked our world, but it was so filling we could barely finish our pints of Guinness afterwards. In the words of the Derry Girls, this rocky road was a total ride.
