Earn Their Stripes

Greetings home-slices,

People are calling last night's episode of Derry Girls the best one yetThis past weekend marked this Crusty Gal's first marching season here in Northern Ireland, and after all of the pomp and circumstance, she is eagerly awaiting the return of everyone and their mother from Donegal.

The weekend's festivities clearly also had an impact on Established, who, inspired by the 11th night bonfires, teased the s'mores-esque combination of digestives, marshmallows, and chocolate in their weekly pie preview. For anyone aware that marshmallows make these Two Crusty Gals say marshmall-NO!, I am pleased to report that Established made the happy error of seemingly forgetting to add them to today's milk chocolate cream cheese and Italian meringue pie.

Like music consisting solely of piccolos and drums, cream cheese and meringue were an odd pairing at first, but proved surprisingly enjoyable. A sandy digestive base dissolved under the silky chocolate filling while wisps of browned meringue peeked out from underneath drizzles of chocolate espresso sauce. In forgoing a cream paring this week, Established used the sauce to create a beautiful striping effect on every slice. You know what they say: stripes make you look heavier, but when the stripes are made of meringue and chocolate drizzle, you're really in trouble!

Trouble or not, this pie was gooey and rich, and its delicious blend of flavors helped this Crusty Gal overlook the lack of a sturdy crust and the textural similarity of the layers. This pie marks yet one more win in a streak of home-runs, proving Established really has earned their stripes.
