High Time for Pie Time


Greetings home-slices,

Sit down, buckle up, and shut your pie holes because it is high time for pie time! 

This week, Established graced us with two pie options (recycled from Valentine's Day): Strawberry with Italian meringue, and dark chocolate cream cheese with honeycomb. 

Let's break them down into bite-size pieces. 

The strawberry meringue was beautifully presented with perfectly toasted swirls. However, the meringue lacked structure and overwhelmed the strawberry filling; the crust, while quite tasty, was difficult to cut. Taken together, this made it a challenge to eat. The combination of filling and meringue was excessively sweet and it would have benefitted from an acidic reprieve. 
The first pie may have been a hard act to swallow, but this next one was a pure delight. Our forks glided through layer upon layer of luscious goodness before reaching the chocolate biscuit base, which was crumbly yet structurally sound. The honeycomb topping provided a sweet crunch, a playful textural contrast, and a pop of color! And what can we say about the ganache? Tall, dark, handsome... Dreamy. The tanginess of the cream cheese acted as the palette cleanser the previous pie so sorely needed. It was truly a master-piece of pie.
